National Spinach Day Recipe: Make A Quiche!

It's National Spinach Day! (Yes, there's a holiday for everything). But this dark leafy green veggie is very good for you. Spinach is at the very top of most superfood lists. The calcium in spinach can help strengthen your bones to fight against injury, and vitamins A and C, fiber, folic acid, and other nutrients fight against colon and breast cancers.

So let's spice up the holiday with a delicious SPINACH QUICHE recipe from Dannon. 

What You Need: 

1 cup Dannon® Plain Nonfat Yogurt
1 tsp. vegetable oil
1/3 cup diced onion
1/3 cup diced fresh tomatoes
1 package (5 ounces) fresh spinach
6 eggs
3/4 cup shredded reduced fat mozzarella cheese

What To Do: 

1. Preheat oven to 350°.
2. Heat oil in a medium pan over medium heat. Sauté the onions for 3-4 minutes or until soft and slightly golden. Add tomatoes and spinach, then cook 1-2 minutes or until spinach is wilted.
3. Whisk eggs in a medium bowl, then stir in yogurt until smooth. Add spinach mixture and cheese, and stir to blend.
4. Pour mixture into 9-inch pie plate. Bake 30-35 minutes or until set. 
5. Let it cool for 10 minutes before cutting.
