Make Your Own Ice Cream Sandwiches

Ice Cream Sandwich recipeDuring the summertime we crave ice cold drinks and ice cream! August 2nd marks National Ice Cream Sandwich Day! Instead of buying some at the store, why not make your own? Quest Nutrition has a delicious and healthy recipe:

What Your Need:

1 medium (7″ to 7-7/8″ long) Bananas

1 serving (serving = 2 tbsp) Bob’s Red Mill Organic High Fiber Coconut Flour

 1 serving (serving = 1 bar) Quest Vanilla Almond Crunch

What To Do: 

Ingredients:
– 1 quest bar
-1 ripe medium banana
-2 TBS coconut flour

Method:
-blend banana well and mix in coconut flour – put into freezer

-prepare the ice cream sandwiches
-preheat oven to 375 F
-microwave questbar for 10 seconds
– break into 4 pieces
– roll each into a ball and flatten between palms, then roll out (with bottle or rolling pin) into 4 flat rectangles
– bake for 2 minutes
– take out, spritz with cooking spray
– bake for 1 more minute –
if you want, use fork to prick decorative lines

– take out the “icecream” banana mix and split in half – put on top of 2 of the rectangle cookies, then use the other 2 to top the ice cream

– makes 2 full ice cream sandwiches
– place back in freezer and let harden – about 30 mins to 1 hour

Makes 2 sandwiches
